15 days Gluten Free or so I Thought....

Turns out those taco supremes from Taco Bell are not gluten-free. Guess I should have read the allergen info on their website. I assumed that the corn taco shells were GF as the Taco Bell store bought ones are. Live and learn. I can say that this is day 3 ice cream free-lol. I have a TERRIBLE weakness for ice cream. I managed to go weeks without having any of the temptation in the freezer until my husband thoughtfully (or so he thought- God love him) brought some home. So I fell off of the wagon.

So this week's trip to the store I replaced the ice cream with yogurt, apples, berries, and bananas. As it is a crisp fall day here I plan to make the following recipe found at gingerlemongirl.com:

Carrie's Simple Baked Apples
a simple technique for baked fruit

4-5 Gala -or- Honeycrisp apples, washed and cored, and sliced
1/4 cup honey
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 cup finely chopped pecans

Directions:
Spritz a medium sized casserole dish with non-stick cooking spray. Place apple slices skin side down on the baking dish. Drizzle honey evenly over the apples. Sprinkle cinnamon and nutmeg evenly over the apples and lastly chopped pecans. Bake in a 350 degree oven for 35 minutes until apples are golden and tender. Serve immediately. makes 4-6 servings.

Day 10 Gluten Free Except for a Cheese Curd-lol

Well I have made it 10 days GF. I was in Monroe, Wisconsin this last weekend for the famous Cheese Days and so I "had" to try one of the famous beer battered deep fried cheese curds. It was heaven-my body's reaction to it not so much. Since my initial day of being GF I have gained 4 pounds- bummer. I seem to be hungry all the time and so I am choosing small snacks like fruit and yogurt. Combined with taking more walks I am hoping to see some weight loss along with my body repairing itself.

Days 4-6 of being GF I had the worst withdrawal headaches. Days 7-10 the headaches are gone, I have more energy and I seem to be sleeping better. I have a favorite bread recipe thanks to my cousin Kathy and I sampled Betty Crockers GF yellow cake and brownies- both were delicious and no one had any idea that they were gluten free!

The pantry is complete (I think)

After another day of running around I think I finally have everything I need. We went to Whole Foods which could be dangerous as there are so many yummy things to chose from. With a pretty good selection and moderately priced items I found everything on my list except for the ever elusive Sweet Rice Flour (Glutinous Flour).



Our next stop was Meijer on Sawmill Road as the Betty Crocker website showed that this store carried the Betty Crocker cake and brownie mixes. Jackpot! I brought home the yellow cake mix and the brownie mix. They also had chocolate cake mix but as a rule we stick to yellow cake in our house. We also found some really tasty crackers too! Blue Diamond Almond Nut Thins come in a variety of flavors and at $3.39 per box they were much cheaper than Glutino brand for a similar sized box. We chose the Country Ranch flavor and found them to be addicting. I noticed on the Blue Diamond website (bluediamond.com) that they also have Smokehouse, BBQ, Sea Salt, Almond, Hazelnut, Pecan and Cheddar Cheese flavors! Meijer had about an 8 foot section of Gluten Free items ranging from mixes to cookies and crackers and some pricey items as well.

Lastly we went to an Asian Grocery store and found the Glutinous rice- yay! It was only $1.89 for a 21.2 oz bag.

Getting the pantry switched over

Today my husband and I went shopping to get the staples for eating gluten free. We started our journey at Trader Joe's and found gluten-free brown rice spaghetti noodles and some bread. We found the store to be short on dry goods and difficult to pin point gluten free items, not to mention way too crowded.

 Our second stop was Marc's Grocery Store where we had much better luck. With an easily identifiable gluten-free section and numerous other gluten-free items spread out around the store, our visit was much more successful than our previous stop. Marc's selection and prices were pretty good. We purchased:
Red Mill Xanthum Gum in an 8oz package for $8.89
Red Mill Tapioca Flour in a 20oz package for $2.48
Red Mill White Rice Flour in a 24oz package for $2.18
Red Mill Brown Rice Flour in a 24oz package for $1.98
Goldbaums Brown Rice Macaroni Pasta in a 16oz package for $1.98

Once we were back home I began to search the internet for sweet rice flour, cereals, crackers and misc. items. While Amazon.com had a great selection, most of the items were in bulk and pretty pricey. Without having tried the items I was hesitant to commit to such large and pricey quantities.

I previously had praised Vitacost.com boy was that a mistake as I received the following email from them. It is my opinion that they should honor the prices that their site displayed!
