Turns out those taco supremes from Taco Bell are not gluten-free. Guess I should have read the allergen info on their website. I assumed that the corn taco shells were GF as the Taco Bell store bought ones are. Live and learn. I can say that this is day 3 ice cream free-lol. I have a TERRIBLE weakness for ice cream. I managed to go weeks without having any of the temptation in the freezer until my husband thoughtfully (or so he thought- God love him) brought some home. So I fell off of the wagon.
So this week's trip to the store I replaced the ice cream with yogurt, apples, berries, and bananas. As it is a crisp fall day here I plan to make the following recipe found at gingerlemongirl.com:
Carrie's Simple Baked Apples
a simple technique for baked fruit
4-5 Gala -or- Honeycrisp apples, washed and cored, and sliced
1/4 cup honey
1 teaspoon cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 cup finely chopped pecans
Directions:
Spritz a medium sized casserole dish with non-stick cooking spray. Place apple slices skin side down on the baking dish. Drizzle honey evenly over the apples. Sprinkle cinnamon and nutmeg evenly over the apples and lastly chopped pecans. Bake in a 350 degree oven for 35 minutes until apples are golden and tender. Serve immediately. makes 4-6 servings.

Oooh this sounds soo good. I never was a pie crust fan anyway. One of my fave apple snacks is cubing the apples( pink ladies , fuji ) and mixing yogurt,vanilla & a little lemon juice, raisins, dates & walnuts. Let sit over night. Think I'm gonna have to go make some now! The not so healthy version includes Cool Whip and Caramel. :D
